If you haven't guessed already, I love salads. Which is quite a funny thing since I was brought up on vegetables. Very little salad made it to our dining table growing up, unless of course mum was on a diet. She wasn't a fan of "rabbit food", and still isn't to this day, believing that eating one little lettuce leaf was enough being good. Maybe this is me rebelling after all those years of having to eat brussels sprouts and.....hmm.....really tough Leigh!
I lOVE this salad and tend to eat it most weeks for either lunch or dinner (or sometimes both). It's super filling and the only cooking required is the boiling of a couple of eggs (if you can be bothered!).
I also love it because it changes everytime I make it, depending on what happens to be in my fridge at that time.
I've popped the recipe below for this particular version, but change it around to your hearts content!
